I went to Uchumi last Saturday and found out that Farmers Choice were having their discounted sale of bacon again until the end (I think) of December. I was tempted to remove my visa card and swipe to buy and hoard some of that bacon at home. I restrained myself. Some people go nuts over shoes, I go nuts over food. I love bacon so sema bacon fest for the next month or so.
Anyway, I thought that there are a couple of people out there like me who love bacon and would like to know a couple of bacon recipes so that you don’t have to eat your bacon the same way all the time.
Chicken and bacon
My favourite bacon recipe is one of chicken and bacon. For this one, I don’t have quantities. But what you need is boneless chicken. Cut it up into cube-size pieces (medium size) and fry it. When it is almost ready add the bacon which should also be cut up into bits. This dish goes very well with baked potatoes.
Here are some other recipes
Bacon-Apple sandwich. Spread some margarine or butter on some bread. Fill with cooked bacon and pieces of green apples. You can add flavour by adding salt, pepper or tomato sauce.
Bacon hotdogs. Fry some bacon. Then fry some onions in the fat. Boil or fry the hotdogs. Wrap the bacon around the hotdogs and put them in a bun with the fried onions. You can add tomato sauce or mustard.
Bacon with French toast. Cook your slices of bacon in a pan. Whisk 2 eggs with some spices, dip bread in the egg mixture and fry it in the bacon drippings. The French toast will have the bacon flavour.
Bacon and mushrooms. Fry some bacon and then fry the mushrooms in the bacon fat. You can eat this with rice or with bread.
Bacon and meat burgers. Buy some meat patties, and cook them in a pan on medium heat, 10 to 12 minutes per side. Cut open a bun, add the beef patties, and fried bacon on top. Add toppings of lettuce and tomatoes.

Bacon Pizza Top a round of pizza dough with tomato sauce, shredded mozzarella, thinly sliced onion, crumbled cooked bacon and salt. Bake at 500 degrees F, for 10 minutes. Drizzle with olive oil.
Bacon-Wrapped scallops. Wrap bacon around scallops; secure with toothpicks. Broil, turning, until crisp, 8 minutes.
Bacon-Wrapped Trout Stuff whole trout with lemon slices and thyme sprigs; season with salt. Wrap in bacon and cook in a skillet over medium-high heat, 4 minutes per side.
Bacon-Wrapped Steak Rub 1 1/2 pounds of beef tenderloin with minced garlic, rosemary, salt and pepper. Wrap with bacon. Sear on all sides in an ovenproof skillet, then roast in a 400 degrees F oven until the meat registers 125 degrees F, 20 minutes.
Tomato-Bacon Gravy Cook 6 slices of chopped bacon in a skillet; drain. In the drippings, simmer a 28-ounce can of whole tomatoes (crushed), 1/4 cup water, 1 1/2 teaspoons sugar, and salt and pepper, for 20 minutes. Add the bacon.
Warm Bacon Vinaigrette Cook 4 slices of chopped bacon in a skillet; drain and crumble. Whisk 3 tablespoons red wine vinegar and 1 tablespoon whole-grain mustard into the drippings; add salt, pepper and the bacon.
Spinach-Bacon Salad Make Warm Bacon Vinaigrette. Toss with baby spinach, sliced mushrooms and sliced red onion.
Sweet Bacon Press both sides of bacon slices in brown sugar; place on a rack set on a rimmed baking sheet. Bake at 375 degrees F, flipping once, for 18 to 20 minutes.

Salad
8 slices Bacon
1 lb Broccoli
1/2 cup Onion, chopped
1/2 cup Raisins
Dressing
1/2 cup Light Mayonnaise
1/2 cup Sugar
1/4 cup Malt vinegar
1 tsp Salt
Directions
Chop bacon strips into 1/2 inch pieces. Cook bacon pieces over medium to medium-high heat, depending on your stove until evenly browned. Drain bacon pieces and set aside.
Make the dressing by combining mayonnaise, sugar, vinegar, and salt in a small mixing bowl. Stir until sugar and salt are dissolved. Set dressing aside in the refrigerator until ready to use.
Cut broccoli flowerets into bite-sized pieces. Chop onions.
Place broccoli, onion, raisins, and bacon pieces in a large mixing bowl. Dress salad with just before serving to preserve the texture of the bacon pieces.

Spinach Salad with Bacon Recipe
Salad:
2 bunches of Spinach – Washed
2 eggs hard boiled
8-12 slices of cooked bacon, crumbled
Add mushrooms or avocado
Dressing:
1/3 cup sugar
1/2 cup ketchup
1/4 cup vinegar
1/2 cup oil
1/2 tsp salt
1 clove of garlic
1 Tbsp grated onion
Preparation:
Tear spinach into small pieces
Toss with all ingredients & dressing
Makes 8 servings
